Tourtiere, a traditional French Canadian Christmas dish

Every year about this time I start baking tourtiere, recalling such fond memories of my French Canadian mother-in-law, Marie Paule, who is no longer with us. Her pies were always amazing. She used to say that all the flavor is in the fat, but in my opinion the pork still adds flavor even after fat is removed from the cooked meat, and this allows you to have an extra slice!
To save time, using ready-made pastry works perfectly. Bake bottom crust first for 10 minutes or so at 350F, poking with a fork so it doesn’t bubble up and warp. Tourtiere filling:
1 lb. ground pork, 1 lb. ground beef, 4 medium sized potatoes, mashed, optional medium onion, chopped and 1 clove garlic or use powder, 1/2 cup water, 1 1/2 tsp salt, 1/2 tsp. each of thyme, sage …if using fresh herbs, double their quantity… pepper and cloves. Brown meats, removing as much fat as possible. Combine all ingredients then add a generous amount of filling to the partially-baked crusts then top with pastry cut-outs. this should make 2 pies. Bake at 425F for the first 15 minutes, then lower to 350F for about 45 minutes. Yummy hot or cold, with ketchup.
